Yong Tau Fu 酿豆腐 is a well known dish in the Hakka cuisine. It is a unique Chinese dish that is made of pork(originally), mackerel fish, tofu, and a variety of soy products and vegetables. Today, I am going to show you how to make Mel's style Yong Tau Fu and the various ways to use the stuffing/paste.
Because Max doesnt like fish, I am preparing the chicken version for him. It is not normal at all, but it works. We have also made brown rice Chee Cheong Fun and bean sauce to go with them.
As a child, growing up seeing my Poh Poh heating the chop board so hard with the fish paste, I was curious what she was doing. Luckily I still remember how she did it. I tried some years ago and started to add ingredients to make them more interesting.
Ingredients for the stuffing/fish paste:
. 1 mackerel fish with head and tail
. 1 kg Minced Chicken (if you plan to stuff the fish and make fishless YTF)
. chopped water chestnuts
. chopped onion
. shredded carrots
. chopped spring onions
. mashed garlic
. mashed ginger
. chopped coriander
. chopped shiitake mushroom
. oyster sauce
. soy sauce
. white pepper
. sesame oil
. salt
. 1 strip of salted fish in oil
For the vegetable and tofu for stuffing, you can get any kind of fried tofu, beancurd skin, hard tofu, bell pepper, big red and green chilis, lady fingers, eggplants, normal size bittergourd (I didnt have it then), mushrooms and any possible vegetable that can hold the stuffing to try out.
You can actually get the black bean sweet sauce from the market or just make your own.
Simplest Recipe Ingredients:
. 2 tbsp hoisin sauce
. 2 tbsp oyster sauce
. a bit of hot water
- Mix them all up and serve.
Once you stuffed the vegetables and tofu, you can pan-fry them like I did or steam them and then fry in pan again. Either way works.

Masukan semua dlm blender.. blender bgi taucu halus... pas tu masak bgi mendidih sekejap..
Kuah merah
1/2 cwn kcng tanah yg dh d goreng

4- 5 sd mkn gula
3 cwn air
1/4 sd mkn garam
Blender semua bhn kt atas bgi kcang halus..
3 sd mkn cili blend
Panaskan sikit myak... tumis 2 bj bwang putih ketuk.. letak 3 sd mkn cili blend.. tggu kering.. masukan semua bhn dlm blender tdi.. mask sekejap bgi kuah agak pekat.. dlm 5 mnt..
Dh bleh mkn ngan apa2 bebola.. hot dog.. sayur..sotong kangkung.. dll..
Campur kuah untuk sesuaikan rasa pedasnya..tabur bijan sangai ngan bwang goreng..

Black gravy
2 SD eating taucu

3 wickets of water
Put everything in the blender.. The Blender gives a smooth taucu... after that cook it to boil for a while..
Red gravy
1/2 wickets of land that has been fried
1 SD eating tpg gndum
1 SD eating tpg jgung
4-5 SD eating sugar
3 wickets of water
1/4 SD eat salt
Blender all the material on the top for a smooth kcang..
3 SD eating chili blend
Heat up a little bit... Stir-Fry 2 BJ White Bwang knock.. Put 3 SD to eat chili blend.. Waiting for dry.. put all the ingredients in the blender just now.. The Mask for a while gives the gravy a bit thick.. In 5 minutes..
Already able to eat with any balls.. Hot dog.. Vegetable.. Squid Kangkung.. etc..
Mixed with gravy to adjust the spicy taste.. spread sesame sangai with fried bwang..

This Hakka Yong Tau Foo (YTF) recipe was my granny’s who migrated from China to Singapore many many years ago. She was from Mei Xian 梅县, a county located in northeastern of Guangdong. My granny used to cook this dish for us without fail every time we go to her place for Lunar New Year reunion dinner and I used to dislike it a lot. But now that I’m all grown up and she is no longer with us, I’m starting to appreciate and even crave for her YTF every now and then.

Serves 4
Making the soup stock
——
200g of dried anchovies (ikan billis) - wash & drain
200g of soya bean - soak for 1 hour
4L of water
3.5 teaspoons of salt
2 teaspoons of sugar
Making the Yong Tau Foo
——
600g of minced pork
50g of shredded dried cuttlefish (grounded)
200g of fish paste or mackerel fish
1 tablespoon of cornflour
1 teaspoon of salt
2 tablespoons of light soya sauce
A few dashes of white pepper
A few pieces of vegetables of your choice
A few firm beancurd and beancurd puff
Making the gravy for dry Yong Tau Foo & Vermicelli
——
4 cloves of garlic - minced
1 tablespoon of light soya sauce
1 tablespoon of fermented black soya bean paste
1 tablespoon of oyster sauce
2 tablespoons of dark soya sauce (premium grade)
200g of minced pork
A few dashes of white pepper
700ml of Yong Tau Foo soup stock
1 teaspoon of sugar
Some cornstarch solution (mix cornflour with water)

800g of thick Vermicelli

One of the more popular ways to enjoy yong tau fu. This method of serving yong tau hu originated from Ampang, KL.
A thick gravy-like black bean sauce is drenched over pieces of deep fried yong tau fu, which consists of the usual stuff like stuffed beancurd (we used Vitasoy Organic Sprouted Tau Kwa), eggplant and bitter gourd etc.
For meat lovers (like us), try using minced pork in place of prawns for a meaty bite!
